Pecorino Sardo is one of Sardinia's oldest cheeses. Its history dates back thousands of years, and can be traced back to the times of the Nuragic civilization, when animal farming was more prevalent among the island’s population than agriculture.
Pecorino Sardo was granted PDO, Protected Designation of Origin Status in 1996, making it one of Sardinia’s foremost cheeses and becoming a symbol of the Sardinian cheesemaking industry. Since then, the quality of this cheese has been guaranteed by the Protection Consortium, composed of private enterprises and cooperative companies operating throughout the region.
Pecorino Sardo PDO is made using whole sheep's milk, obtained exclusively from sardinian sheep farms.
Every wheel of Pecorino Sardo, both Mild and Mature, once it’s reached the minimum ageing period, is carefully checked. Then the producer label is applied displaying the Pecorino Sardo PDO trademark, a numbered sticker issued by the Consortium and the EU’s PDO logo.
